Fill a small saucepan with fava beans and a cup of water. Bring to a boil, then mash the beans partially with a potato masher (as if they were refried beans.) Meanwhile, wash and coarsely chop the mint, parsley, and scallions. Add the lemon, citric acid, stir and pour into bowls. Serve with the tomato, red onion, olives, and pita bread. And, of course, a fresh cup of coffee.
